From the Junk Mail: Tollhouse Magic Mint Chocolate Bark

I got this recipe inside my usual wad of junk coupons and grocery store flyers, and it has GOT to be the easiest candy recipe ever!


Magic Mint Chocolate Bark (the junk mail version)

1 2/3 c. Nestle dark chocolate & mint morsels
1/3 c. chopped nuts of choice

PREHEAT oven to 325° F. Line small baking sheet with foil or parchment paper.

POUR morsels onto prepared baking sheet. Arrange morsels so they are touching each other in a single layer (roughly an 11 x 9-inch rectangle).

BAKE for 1 to 3 minutes or until morsels are shiny. Remove from oven to wire rack. With tip of butter knife or wooden pick, immediately swirl morsels to create a swirled pattern.

SPRINKLE with nuts. Hold baking sheet 3 inches above counter and drop to settle nuts into melted morsels. Refrigerate for 1 hour or until firm. Break into pieces. Store in airtight container in refrigerator.

VARIATION: Substitute broken pretzel pieces or another nut of choice for the almonds.

You could easily Paleo-ize this (or just allergen-free this) by substituting cacao or Enjoy Life chips for the tollhouse stuff, and add coconut flakes, dried fruit, or whatever you want to the top besides the nuts.

More inventive cooks can figure out how to add a caramel layer, I'm sure. You could even stack layers of different-colored chocolate by refrigerating between layers--I did this with Jello back in the day.

For those not doing Paleo or allergen-free baking, you can also swirl white chocolate chips, or even butterscotch, or peanut butter chips, instead of the mint ones. If I could find an allergen-free white chocolate chip, I'd do it myself.

I hear white chocolate (melted) takes food coloring rather well, and there are holiday-colored occasions coming up...and then all year 'round. This could very well be your "go-to" candy for every holiday.
